Lee Hye-jung's Burdock, Soybean, and Maitake Mushroom Rice

A healthy protein-packed pot rice made by first stir-frying soaked soybeans in a pot to bring out their nuttiness, then topping with burdock and maitake mushrooms.

Cooking tips

  • Soaking rice for too long releases starch and makes the rice mushy, so it's best to drain it in a colander after washing.
  • Stir-frying the soybeans in the pot beforehand gives them a fluffy, nutty texture and removes any beany odor.
  • Instead of maitake mushrooms, you can use shiitake or oyster mushrooms.
