Recipe

Finely chop the chives and cut the butter into small pieces.
Add 30ml of lemon juice to a pot and simmer over low heat until reduced by half.
While keeping the heat low, add the 30g of prepared butter in small portions, whisking continuously to melt and emulsify.
If the sauce breaks or becomes thin like melted butter, add a small amount of water bit by bit while whisking to restore it to a smooth consistency.
Once the desired consistency is reached, turn off the heat, add the chopped chives, and season with salt and pepper to finish.

Put the lemon juice in a pot and reduce it by half over low heat.
Add the butter in small portions, stirring over low heat to melt, and adjust the consistency by adding a small amount of water if needed.
Turn off the heat, add the chopped chives, salt, and pepper, and mix to finish.

Cooking tips

When reheating the sauce, make sure to warm it over low heat, keeping it below 50 degrees Celsius, to prevent the emulsion from breaking.
Since fresh herbs quickly discolor due to acid and heat, if you are making the sauce ahead of time, it is best to prepare only the base without the herbs and add them just before serving.
Depending on your personal preference for acidity or the main ingredient, you can flexibly adjust the ratio of lemon juice to water, such as to 1:2.
