Recipe

Gradually add water to the semolina flour while kneading until it forms a smooth, cohesive dough.
If the dough cracks, moisten your hands slightly to adjust the hydration; once smooth, wrap in plastic wrap and let it rest.
After resting, roll out the dough with a rolling pin, then fold and shape it into a thick, even rectangle.
Cut the dough into strips of uniform thickness, then gently roll and stretch each strip between both hands to form long pici noodles.
Dust with extra flour to prevent sticking, then cook the noodles in boiling salted water until fully cooked through.
Transfer the cooked noodles to a bowl, add a little pasta water, and gently stir for about 30 seconds to cool slightly.
Once the pasta has cooled to a warm temperature, generously add the basil pesto along with some pasta water and toss until glossy and well coated, then plate.

Make a dough with semolina flour and water, then hand-stretch into pici noodles.
Cook the noodles completely in salted water, drain, add pasta water, and let cool slightly.
Add basil pesto, adjusting the consistency with pasta water to prevent dryness, and mix well to finish.

Cooking tips

When hand-stretching pici, if the dough dries out, lightly mist with water to maintain moisture and elasticity.
If you mix pesto into freshly drained, hot noodles, the heat can turn the basil pesto brown; let the noodles cool for about 30 seconds before tossing.
If the sauce becomes too thick, gradually add pasta water or warm water to achieve a smooth consistency.
