Cooking tips

  • Laying the fatty side of the meat on the bottom of the pot releases oil and prevents the kimchi from sticking and burning.
  • Adding 2 tbsp of doenjang to the seasoning suppresses excessive sourness of the kimchi and deepens the savory flavor of the broth.
  • When using a regular pot, cook for about 40 minutes so the kimchi becomes tender enough to tear along the grain and the meat texture becomes chewy.
