Blanch the prepared cherry tomatoes in boiling water for 40 seconds, then immediately transfer to cold water to cool down.
Peel off the skins gently from the tomatoes soaked in cold water, then pat dry slightly.
In a bowl, beat 2 eggs and 1/3 tablespoon of salt until smooth and free of lumps to make the egg wash.
Pour 200ml of vegetable oil into a frying pan and begin preheating over very low heat.
Place half of the flour in a wide tray, arrange the peeled cherry tomatoes on top, then sprinkle the remaining flour evenly over them. Shake gently to coat thoroughly.
Dip the floured cherry tomatoes into the egg wash, then roll them in 1 cup of breadcrumbs to ensure a thick, even coating.
Add all the coated tomatoes at once into the preheated oil and fry, turning occasionally, until golden brown.
Remove the fried tomatoes using a sieve to drain excess oil, then let them cool for at least 5 minutes to avoid burns from the hot inner juice before eating.
