Hong Shin-ae's Pot-Cooked New Rice

A foolproof pot rice method: boil water completely over high heat with the lid open, then steam over low heat for glossy, sticky rice.

Ingredients needed 🛒4 servings

  • new rice, as needed
  • water, as needed
  • a handful of ultari beans (or tiger beans)

Recipe 🍳

  1. Place the new rice in a pot and gently rinse it under running water three to four times, being careful not to wash away the rice germ.
  2. Place your finger lightly on the surface of the rice and add water until it reaches the first joint of your index finger.
  3. If desired, sprinkle cleaned ultari beans or tiger beans evenly over the rice without adjusting the water level.
  4. With the lid completely open, turn the gas or induction on to the highest heat and bring to a boil.
  5. Allow the water to bubble vigorously and evaporate until the liquid has reduced and the rice grains are visible on the surface.
  6. Once the water has reduced enough that the rice takes shape, close the lid completely and reduce the heat to the lowest setting.
  7. Keep the heat on low and let it steam undisturbed for 5 to 10 minutes until the inside is soft. Then turn off the heat and gently fluff the rice from top to bottom.
  1. Gently rinse the new rice, measure the water to the first joint of your index finger, and add beans on top.
  2. With the lid fully open, boil over high heat until the water evaporates and the rice grains become visible.
  3. When the water is almost gone, cover with the lid, reduce to the lowest heat, and let it steam for 5 to 10 minutes to finish.

Cooking tips 💡

  • If you cover the pot from the start, the liquid may boil over or burn if the heat isn't controlled properly. So, boldly keep the lid open until the water is almost completely reduced.
  • Because new rice has a higher moisture content, even if you add moist beans, do not increase the water; this is the secret to fluffy rice.
  • The more recent the milling date, the better the rice's inherent flavor and sweetness, so it's a good idea to check the milling date on the back of the package when buying.
