- Use regular firm tofu for stew or pan-frying, rather than silken or soft tofu, to achieve the thick and rich texture characteristic of kongguksu.
- Besides somyeon, you can use various noodles such as kalguksu noodles, dried kalguksu, or naengmyeon noodles, but avoid udon or ramyun types as they don't pair well.
- Be sure to blend in peanut butter and toasted sesame seeds to eliminate the beany smell of tofu and create a deep flavor like real kongguksu.
- Immediately after cooking the noodles, rinse them vigorously in cold water and ice water as quickly as possible to prevent them from becoming soggy and to maintain a chewy texture.
