Cooking tips

  • Even without soaking the bones for a long time to draw out blood, the broth will remain clear and clean if you carefully skim off the blood foam that collects during the initial boil.
  • The meat from the oxtail or beef feet should be removed after about 1 hour and 30 minutes of boiling to prevent it from becoming too mushy or dissolving into the broth.
  • Slice the large green onion very thinly so that it wilts slightly from the heat of the broth, allowing its aroma to naturally infuse into the soup.
