Recipe

Cut the bacon into large pieces and have the kkwarigochu, ginkgo nuts, ginger, and black pepper ready to add right away.
Add 1 tablespoon of cooking oil to a pan, then add the bacon, ginkgo nuts, and whole kkwarigochu.
Stir-fry over high heat, mixing the ingredients so the bacon renders plenty of fat.
Once the bottom of the bacon turns golden, add the ginger and black pepper to infuse their aroma.
When the kkwarigochu has wilted slightly and all the ingredients are golden, turn off the heat and transfer to a plate.

Add cooking oil, bacon, ginkgo nuts, and kkwarigochu to a pan and stir-fry over high heat.
Once the bacon fat is rendered, add ginger and black pepper to infuse their aroma.
When the ingredients turn golden, transfer to a plate and serve.

Cooking tips

If using pork belly instead of bacon, it's best to season it separately with salt or seasoned salt.
Control the heat so the bacon doesn't burn and become hard, and stir-fry the kkwarigochu only briefly so it retains its crunch.
