  • 1 cup potato starch
  • 1 tablespoon oyster sauce
  • a pinch of black pepper
  • a pinch of seasoning
  • sufficient vegetable oil
  • simple soy sauce ingredients (soy sauce, vinegar, a pinch of red chili powder)

Recipe 🍳

  1. Mix ground beef with black pepper, seasoning, a little egg wash, and oyster sauce. Knead well to prepare the beef filling.
  2. Slice the eggplant into round pieces, making slits without cutting through the ends to form a pocket-like shape.
  3. Fill the slits of the eggplant with the prepared beef filling.
  4. Pour off the top water from the pre-soaked potato starch, then mix the remaining sedimented starch with 1 egg and a small amount of vegetable oil to create a smooth, crispy batter.
  5. Coat the stuffed eggplant evenly with the potato starch batter.
  6. Fry the battered eggplant in heated oil until golden and crispy.
  7. Drain excess oil, transfer to a serving dish, and serve with simple soy sauce dressing.
