- rice 1 bowl
- eggs 2
- green onion 1/2 stalk
- lettuce as needed
- salt a pinch
- oyster sauce 1/2 tablespoon
- vegetable oil 2 to 3 tablespoons
Recipe 🍳
- Cut the green onion in half lengthwise and finely chop it.
- Crack 2 eggs into a bowl and mix well.
- Heat vegetable oil in a pan over medium-high heat, then pour in about half of the beaten eggs and stir gently.
- Add the rice and use a spatula or ladle to press down and mix thoroughly with the eggs.
- Place salt around the edge of the pan and add a small amount of oyster sauce to season.
- Continue frying over high heat until the rice grains are fluffy and separated, breaking up any clumps.
- Finally, add the chopped lettuce in an appropriate size and quickly stir-fry once more to finish.
- Chop green onion finely and beat the eggs.
- Heat oil in a pan, add eggs and rice, and stir-fry.
- Season with salt and oyster sauce, and stir-fry until the rice is fluffy.
- Add lettuce and lightly stir-fry to finish.

- Do not overcook the lettuce, or it will lose its crisp texture—add it at the end and either turn off the heat immediately or stir-fry quickly.
- When using cold rice, press it down with the back of a spoon or ladle to help separate the grains during frying.
