- Score the chorizo sausage, remove the casing, then dice it finely.

- Add the warmed instant rice to the pan and break up the rice grains while stir-frying with the scrambled eggs until firm.
- Once the rice is dry, add the minced garlic first to release its aroma, then add the chopped green onions and stir-fry together.
- When the green onions are slightly softened, add the diced chorizo and stir-fry until the red oil from the chorizo renders out.
- Pour in the kecap manis and stir-fry until it caramelizes slightly, then season. Add pepper.
- Add the shredded lettuce and stir-fry quickly for just a moment using residual heat before turning off the heat to finish.
- Dice chorizo, green onion, and garlic into appropriate sizes and prepare beaten eggs.
- Heat oil in a pan, scramble eggs, then add instant rice and stir-fry until firm.
- Add minced garlic and green onion to enhance aroma, then add diced chorizo and cook until oil renders.
- Season with kecap manis and pepper, then add thinly sliced lettuce and stir-fry briefly with residual heat to finish.
Cooking tips 💡
- Chorizo sausage itself is seasoned and salty, so it's best to minimize initial salt seasoning.
- Lettuce wilts and releases water if overcooked, so add it just before turning off the heat to maintain its crispness.
