  • Chinese noodles (or thin wheat noodles) 1 serving
  • scallion half large
  • liquid chicken stock 1 tablespoon
  • water 2 cups (400cc)

Recipe 🍳

  1. Slice the scallion thinly and cut the chicken breast into thin strips against the grain to ensure tenderness.
  2. Bring water to a boil, cook the Chinese noodles to desired doneness, then transfer directly to a bowl without rinsing with cold water.
  3. In a pan or pot, add 2 cups (400cc) of water and 1 tablespoon of liquid chicken stock, then bring the broth to a boil.
  4. Once boiling, add the sliced chicken breast and gently simmer to enhance the broth’s flavor and cook the meat through.
  5. Skim off any foam that forms during boiling to maintain a clean, crisp taste.
  6. Remove the cooked chicken breast and set aside separately for use as a topping on the noodles.
  7. In the remaining broth, gently stir in 1 egg and simmer briefly until the egg is fully cooked.
  8. Carefully pour the egg-infused broth over the noodles, then top with the prepared scallion greens to finish.
