- liquid chicken stock 1 tablespoon

- Slice the scallion thinly and cut the chicken breast into thin strips against the grain to ensure tenderness.
- Bring water to a boil, cook the Chinese noodles to desired doneness, then transfer directly to a bowl without rinsing with cold water.
- In a pan or pot, add 2 cups (400cc) of water and 1 tablespoon of liquid chicken stock, then bring the broth to a boil.
- Once boiling, add the sliced chicken breast and gently simmer to enhance the broth’s flavor and cook the meat through.
- Skim off any foam that forms during boiling to maintain a clean, crisp taste.
- Remove the cooked chicken breast and set aside separately for use as a topping on the noodles.
- In the remaining broth, gently stir in 1 egg and simmer briefly until the egg is fully cooked.
- Carefully pour the egg-infused broth over the noodles, then top with the prepared scallion greens to finish.
- Slice scallion and chicken breast thinly; cook noodles and set aside in a bowl.
- Boil chicken breast in the liquid chicken stock broth, then remove the meat separately.
- Whisk egg into the broth and cook until set, then pour over noodles and top with chicken and scallion.
