Ttukdak Hyung's Super Simple Restaurant-Style Rice Noodles

A super simple rice noodle dish that uses rice noodle concentrate and commercially available brisket slices to create the deep flavor of a delivery restaurant at home in just 4 minutes.

Ingredients needed 🛒1 servings

  • Rice noodles, 1 serving
  • Onion, 1/4
  • Vinegar, 1 tbsp
  • Sugar, 1 tbsp
  • Rice noodle concentrate, as needed
  • Beef brisket slices, as needed
  • Bean sprouts, 1 handful
  • Cilantro, to taste
  • Red chili, 1/2
  • Hoisin sauce or chili sauce, to taste

Recipe 🍳

  1. Dissolve vinegar and sugar in lukewarm water, then add thinly sliced onions and let them pickle in the sweet and sour mixture.
  2. Pour water into a pot, dissolve rice noodle concentrate to your taste, and prepare the broth.
  3. Add the pre-soaked rice noodles to the boiling broth and cook for exactly 30 seconds. Drain and place in a bowl.
  4. Lightly blanch the beef brisket slices in the broth, then remove and set aside.
  5. Blanch the bean sprouts in the same broth for 10 seconds, then drain and place them on top of the rice noodles.
  6. Generously top the bean sprouts with the prepared pickled onions, blanched beef brisket, and cilantro as desired.
  7. Pour the hot rice noodle broth generously into the bowl and garnish with chopped red chili.
  8. Serve with hoisin sauce or chili sauce according to your preference.

  • Beef brisket slices can become tough if boiled for too long, so remove them as soon as the pink color disappears, similar to shabu-shabu.
  • The remaining rice noodle concentrate can be used as a versatile broth base for various dishes like shabu-shabu or boiled meat.
