Recipe

Remove the connective tissue from the pork and flatten it using a meat mallet.
Pierce both sides of the pork with a fork, then thread onto chopsticks together with green onions.
Season both sides with salt and pepper.
Coat evenly in flour, egg wash, and breadcrumbs in sequence.
Fry until golden brown at 170 degrees Celsius. Add ingredients in batches to maintain oil temperature, and remove when the coating has fully developed color.
For leftover pork connective tissue (500g), beef (500g), onion (200g), savory salt (1 tablespoon), ground pepper (1 tablespoon), and parsley (20g), process in a food processor to make a paste.
Shape the paste into round portions, then coat in breadcrumbs, egg wash, and breadcrumbs again in sequence.
Fry at 170 degrees Celsius until golden.
Serve with tonkatsu sauce, toasted sesame seeds, and garlic mayonnaise.
