- small abalone : 10 pieces
- butter
- minced garlic : 1 tablespoon
- onion

- egg yolk : 3 eggs
- grated Parmesan cheese : 3 tablespoons

Recipe 🍳
- Clean the small abalone thoroughly with a toothbrush, then blanch briefly in boiling water.
- Use a spoon to remove the abalone from its shell, and carefully cut open the mouth and separate the innards.
- Heat butter in a pan, add minced garlic (1 tablespoon), onion, abalone innards, and abalone meat. Season with salt and pepper and sauté until fragrant.
- In a bowl, combine 3 egg yolks, 3 tablespoons of grated Parmesan cheese, cooked pasta, peperoncino, and the prepared abalone sauce. Mix well.
- Transfer to a serving dish and finish by sprinkling with pepper and chopped parsley.
- Clean the abalone thoroughly, blanch briefly, then remove the meat and innards. Sauté the innards and meat with minced garlic, onion, and butter in a pan until golden and aromatic.
- In a bowl, mix cooked pasta with egg yolks, grated Parmesan cheese, peperoncino, and the pre-made abalone sauce until evenly combined.
- Arrange the finished abalone pasta on a plate and garnish with freshly ground pepper and chopped parsley for an elegant seafood pasta experience.
