Ingredients needed 🛒1 servings
- 1 serving of pasta
- 1 handful of spinach
- 3-4 cloves of garlic
- 1 handful of pistachios
- 2 tablespoons olive oil
- A little salt
- A little black pepper
- 4-5 cherry tomatoes
- An appropriate amount of feta cheese
- 1 coin broth cube
- An appropriate amount of water
Recipe 🍳
- In a pan, combine water, salt, and coin broth, and start cooking the pasta.
- Add whole garlic cloves when adding the pasta. Also add the spinach; once wilted, remove the spinach and garlic first.
- In a blender, combine the removed spinach and garlic, pistachios, olive oil, salt, pepper, and a little pasta water. Blend until smooth to make the pesto sauce.
- Halve the cherry tomatoes and add them to the pan with the cooking pasta. Cook until the tomato juices release.
- Once the liquid in the pan has reduced slightly, pour in the blended spinach pesto sauce.
- Stir over medium heat until the pasta and sauce are well combined, then immediately turn off the heat.
- Serve the pasta in a bowl, crumble feta cheese over the top, and finish with a drizzle of extra virgin olive oil and a sprinkle of black pepper.
- Boil pasta with broth, garlic, and spinach in a pan. Remove spinach and garlic first.
- Blend the removed ingredients with pistachios, oil, and pasta water to make pesto.
- Add tomatoes to the cooking pasta, stir-fry, then add pesto sauce and toss to finish.
