Wash the perilla peppers thoroughly and cut them in half lengthwise to allow the marinade to penetrate well. Cut the pork belly into large pieces about 1.5cm thick.
In a bowl, mix together soy sauce 3 tablespoons, oyster sauce 1 tablespoon, sugar half tablespoon, mirin 3 tablespoons, and black pepper 4 pinches. Stir until the sugar dissolves completely to make the marinade.
Heat a pan over high heat and add the pork belly. Stir-fry until golden brown and crispy on all sides.
As the pork cooks, the excess fat will render out—wipe it away carefully with a kitchen towel.
Add the 10 cloves of whole garlic and continue stir-frying with the pork until the garlic surface turns golden brown.

Stir-fry the pork belly in a pan until the fat is rendered, wipe away excess grease, then add whole garlic and cook until golden.
Add the sauce and perilla peppers, stir-fry over high heat until everything is dry and well-coated, then finish with sesame oil and toasted sesame seeds.
