Rinse 1/4 head of old kimchi thoroughly under water to remove seasoning, squeeze out as much moisture as possible, and trim off the stem ends.
Mix the prepared old kimchi with 3 tablespoons of sesame oil and 1/2 tablespoon of sugar, and toss well to marinate.
Drain 2 cans of tuna through a sieve, pressing firmly with a spoon to remove all oil completely.
Cut 2 green chili peppers in half, remove seeds, and finely chop.
In a bowl, combine the drained tuna, chopped green chilies, 4 tablespoons of mayonnaise, and 1/2 tablespoon of sugar. Mix gently until evenly blended without clumping.
Add 2 teaspoons of sesame oil and 1/2 teaspoon of salt to 1kg of rice and mix well to make seasoned gimbap rice.
Lay the gimbap seaweed sheets on a surface with the rough side facing up. Place a tennis ball-sized portion of seasoned rice on the sheet, spreading it evenly while leaving about 2cm at the end uncovered.
Place 4 perilla leaves on top of the rice, then add the marinated old kimchi, followed by a generous layer of spicy green chili tuna mayo. Roll tightly.
Brush the finished gimbap surface evenly with sesame oil and slice into bite-sized portions.
Wash and squeeze out excess moisture from old kimchi, then toss with sesame oil and sugar. Drain tuna thoroughly and mix with chopped green chilies, mayonnaise, and sugar.
Season rice with sesame oil and salt, then spread evenly onto the seaweed sheet.
Layer perilla leaves, old kimchi, and tuna mayo in order, then roll tightly and slice.

Remove all oil from the tuna can completely; this ensures the mayo mixture stays smooth and doesn’t become greasy or thick.
When placing old kimchi on the seaweed, cross the stems and leafy parts to ensure even distribution of flavor and texture throughout the roll.
