Recipe

Wash the sweet potatoes thoroughly under running water, then cut them diagonally into bite-sized pieces without peeling.
To prevent oil splattering when frying, pat the cut sweet potatoes completely dry with a paper towel.
Pour plenty of cooking oil into a pan and preheat. Add the sweet potatoes and fry for about 6–7 minutes until the outside is golden and the inside is cooked.
Remove the nicely fried sweet potatoes with a strainer and drain the oil on a paper towel.
In a new frying pan, add a little of the oil used for frying and spread the sugar evenly.
Over low heat, let the sugar melt into a brown syrup without stirring with a spatula.
Once the sugar is completely melted, add the prepared piece of butter and mix to create a fragrant syrup base.
Add the fried sweet potatoes to the melted syrup and quickly toss to coat, then sprinkle with a little cinnamon powder and mix.
To prevent the finished sweet potatoes from sticking together, place them spaced apart on a wide tray to cool completely, then transfer to a plate.

Cut sweet potatoes into bite-sized pieces, remove moisture, and fry in oil until golden.
In a pan, melt oil and sugar over low heat without stirring, then mix in butter to make a syrup.
Quickly toss the fried sweet potatoes in the syrup to coat, then drop them one by one to cool completely.

Cooking tips

When making the sugar syrup, do not stir with a utensil, as the sugar will crystallize and harden; let it melt undisturbed.
Cut the sweet potatoes by turning and slicing diagonally to create many angular edges, which helps the syrup coat evenly and makes the texture crispier.
The coated bas sticks together easily when hot, so be sure to spread them out widely when cooling.
