Cooking tips

  • Use soft stewing tofu instead of firm tofu for a much softer, pudding-like interior.
  • When coating tofu with starch, if it's too dry the starch won't stick, so drain only lightly.
  • When frying the tofu, they may stick together, so gently separate them with chopsticks and cook until the outside is hard.
