  • 1/2 apple
  • 1 Cheongyang chili pepper
  • 1/2 red chili pepper
  • Appropriate amount of fine gochugaru
  • Appropriate amount of soy sauce
  • Appropriate amount of anchovy sauce
  • Appropriate amount of sugar
  • Appropriate amount of roasted sesame seeds
  • Appropriate amount of apple vinegar (2x concentrated)
  • 1 drizzle of sesame oil

Recipe 🍳

  1. In a bowl, combine fine gochugaru, soy sauce, anchovy sauce, sugar, roasted sesame seeds, and 2x concentrated apple vinegar to make a sweet, sour, and spicy dressing.
  2. Wash the watercress thoroughly. Remove the tough stems and roughly chop the tender leaves into bite-sized pieces.
  3. Thinly slice the apple (with skin) and the Cheongyang and red chili peppers.
  4. In a large mixing bowl, add the prepared watercress, apple, and half of the sliced chili peppers.
  5. Gradually add the prepared dressing, adjusting to your taste, and toss gently to avoid crushing the ingredients.
  6. Finally, drizzle with one round of sesame oil and toss lightly once more to add a nutty aroma.
  7. Serve generously on a plate and garnish with the remaining sliced chili peppers for color.
