Recipe 🍳
- Heat olive oil in a pot over medium heat and sauté minced garlic and minced shallots until softened.
- When the aroma of garlic and shallots rises, add the sour kimchi, chopped with scissors, and sauté together.
- Add diced bell pepper, and once it releases moisture, add a little cumin powder, smoked paprika powder, and chili powder to release their aromas.
- Add diced fresh tomatoes and tomato sauce, mix well, and simmer for about 10 minutes until it thickens slightly.
- Season with sugar, salt, and pepper to balance the sweetness and acidity of the sauce.
- Make wells in the sauce for the eggs and crack the room-temperature eggs into them one by one.
- Cover with a lid and cook for about 5 minutes until the eggs are poached to a soft-boiled consistency.
- Turn off the heat, crumble feta cheese over the top, and garnish with chopped chives and a drizzle of olive oil to finish.
- Sauté garlic and shallots in olive oil, then add chopped sour kimchi and sauté together.
- Add bell pepper, spice powders, fresh tomatoes, and tomato sauce, and simmer for 10 minutes to make the sauce.
- Season with sugar and salt, then add eggs, cover, and cook until soft-boiled. Top with cheese and chives.
Cooking tips 💡
- Eggs taken directly from the refrigerator may cook only on the outside while remaining cold inside. Take them out about 30 minutes before cooking to reach room temperature.
- The finished egg in hell is delicious when dipped with your favorite bread, such as baguette, toast, or sourdough.
