  1. Heat olive oil in a pot over medium heat and sauté minced garlic and minced shallots until softened.

  3. Add diced bell pepper, and once it releases moisture, add a little cumin powder, smoked paprika powder, and chili powder to release their aromas.
  4. Add diced fresh tomatoes and tomato sauce, mix well, and simmer for about 10 minutes until it thickens slightly.
  5. Season with sugar, salt, and pepper to balance the sweetness and acidity of the sauce.
  6. Make wells in the sauce for the eggs and crack the room-temperature eggs into them one by one.
  7. Cover with a lid and cook for about 5 minutes until the eggs are poached to a soft-boiled consistency.
  8. Turn off the heat, crumble feta cheese over the top, and garnish with chopped chives and a drizzle of olive oil to finish.

Cooking tips 💡

  • Eggs taken directly from the refrigerator may cook only on the outside while remaining cold inside. Take them out about 30 minutes before cooking to reach room temperature.
  • The finished egg in hell is delicious when dipped with your favorite bread, such as baguette, toast, or sourdough.
