- soybean paste 0.5 tablespoon
- mayonnaise 1 tablespoon
- vegetable oil a little
- rice 1 bowl
- eggs 2
- mozzarella cheese a small amount
- black pepper a little

Recipe 🍳
- In a bowl, add chopped kimchi 3 tablespoons and finely chopped green onion 1 stalk.
- Add light soy sauce half tablespoon, sugar half tablespoon, red pepper powder half tablespoon, soybean paste half tablespoon, and mayonnaise 1 tablespoon. Mix well to create the kimchi seasoning base.
- Lightly coat a pan with vegetable oil and spread the prepared kimchi seasoning evenly across the surface.
- When sizzling sounds begin, stir gently to avoid burning and cook carefully.
- Once the kimchi is nicely cooked, reduce heat to low and add one bowl of rice, stirring thoroughly until no clumps remain.
- Mound the rice in the center of the pan into a rounded shape.
- Mix the beaten egg and mozzarella cheese together, then pour around the edge of the pan in a circular pattern.
- Cover with a lid and let it sit over gentle heat until the cheese melts and the eggs are set, then sprinkle with black pepper and parsley powder.
- Mix chopped kimchi and green onion with soy sauce, sugar, red pepper powder, soybean paste, and mayonnaise to make the seasoning.
- Sauté the seasoning in a pan, then lower heat and add rice, tossing until combined. Mound the rice in the center.
- Pour the cheese-egg mixture around the edge, cover with a lid, cook until set, then finish with black pepper and parsley.
Cooking tips 💡
- Mayonnaise helps soften the sharp tang of kimchi and adds a smooth, rich flavor that pairs exceptionally well with kimchi fried rice.
- When frying the rice, keep the heat low to prevent the seasoning from sticking and burning on the bottom of the pan.
