In the same pan used for the sausage, add 1 sliced onion, 2 tablespoons soy sauce, 1 tablespoon sugar, and 3 tablespoons water. Simmer until the onion is soft and the sauce has reduced.
Cook until the onion’s sharpness fades and the sauce has fully penetrated the onion.
Crack 1 egg into the cooked onion sauce and cook until just set but still moist.
Place rice in a bowl, top with the cooked onion and egg mixture, then garnish with the previously grilled sausage.

Grill the sausage until golden brown and set aside.
