- chicken thigh meat 350g
- chwiltteok noodle serving 1 portion
- green onion 1 stalk
- chopped kimchi 3~4 tablespoons
- sugar 1 tablespoon
- water 2 paper cups
- gochujang 0.5 tablespoon
- japanese-style soy sauce 2 tablespoons
- minced garlic 1 tablespoon
- red pepper powder 2 tablespoons
- chicken stock 0.3 tablespoon
- toasted sesame seeds a pinch
Recipe 🍳
- Cut green onion roughly with scissors, and separate chwiltteok noodles so they don’t clump together.
- Heat cooking oil generously in a pan, add the chopped green onion, then place chicken thigh meat skin-side down.
- Sear the chicken, flipping occasionally to let the green onion aroma infuse, and cut into bite-sized pieces using scissors as it cooks.
- Once the chicken is partially cooked, add chopped kimchi (3–4 tablespoons) and sugar (1 tablespoon), stirring to combine with the chicken.
- When the chicken is nearly done, pour in water (2 paper cups), then add gochujang (0.5 tablespoon), japanese-style soy sauce (2 tablespoons), minced garlic (1 tablespoon), red pepper powder (2 tablespoons), and chicken stock (0.3 tablespoon) to make the sauce.
- Bring the sauce to a boil, then add the separated chwiltteok noodles. Simmer until the noodles are cooked through and the broth has reduced to a thick, cohesive consistency.
- Finish by generously sprinkling toasted sesame seeds on top.
- Sear green onion and chicken thigh meat skin-side down in a pan until golden, then cut into bite-sized pieces with scissors.
- Stir in chopped kimchi and sugar, then add water and gochujang, japanese-style soy sauce, minced garlic, red pepper powder, and chicken stock, and bring to a boil.
- Add chwiltteok noodles and simmer until the noodles are cooked and the broth becomes thick and sticky, then sprinkle with toasted sesame seeds.
