- 1 bunch chives
- 1 package enoki mushrooms
- 1 cup (paper cup) Korean pancake mix
- 1 cup (paper cup) water
- 1 tbsp minced garlic
- generous amount breadcrumbs
- cooking oil as needed
- a little tonkatsu sauce
Recipe 🍳
- Cut the chives into roughly two knuckle-length pieces.
- Trim the ends of the enoki mushrooms and cut them into pieces similar in size to the chives.
- In a bowl, combine the prepared chives and enoki mushrooms, then add 1 cup of Korean pancake mix and 1 cup of water in a 1:1 ratio.
- Add 1 tbsp minced garlic for aromatic flavor and mix until everything is evenly combined.
- Just before cooking, add a generous amount of breadcrumbs to the batter and mix lightly for maximum crispiness.
- Heat a generous amount of cooking oil in a pan, then spread the batter thinly and cook until golden brown.
- Transfer the crispy buchujeon, cooked on both sides, to a plate and drizzle with a little tonkatsu sauce to finish.
- Cut chives and enoki mushrooms into bite-sized pieces.
- Mix Korean pancake mix and water in a 1:1 ratio, then add minced garlic and breadcrumbs to make the batter.
- Spread the batter thinly in a well-oiled pan, cook until crispy on both sides, and drizzle with tonkatsu sauce.
