Solo Cooking God's Chicken Breast Tomato Stew

- 1 tomato
- 1 tablespoon cooking oil
- 1 sweet potato
- 1/2 bell pepper
- 1/2 onion
- 1 piece (100g) chicken breast
- 1 cup store-bought tomato pasta sauce
- 1/2 cup water
- a pinch of parsley powder
Recipe 🍳
- Score a cross on the top of the tomato, microwave for 30 seconds, then peel and set aside.
- Heat cooking oil in a pot, add the roughly diced sweet potato, bell pepper, and onion, and sauté until the vegetables soften.
- To the same pot, add the bite-sized chicken breast pieces and the peeled, roughly crushed tomato.
- Pour in 1 cup of store-bought tomato pasta sauce and 1/2 cup of water, just enough to cover the ingredients.
- Adjust the heat to medium, cover, and simmer gently until the sweet potatoes are completely tender and the stew thickens.
- When the flavors meld and the stew thickens, transfer to a bowl and sprinkle with parsley powder.
- Microwave the tomato to peel it, and roughly chop the vegetables and sweet potato.
- Sauté the sweet potato and vegetables in a pot, then add the chicken breast, tomato, pasta sauce, and water.
- Simmer over medium heat until the sweet potato is fully cooked.

- You can substitute sweet potato with regular potato, and feel free to add any leftover vegetables from your fridge, such as mushrooms.
