Solo Cooking God's Beef Short Rib and Soybean Sprout Rice
🍽️ A one-bowl dish where grilled beef short rib is combined with soybean sprouts and rice, steamed to retain crispness, then tossed with a versatile soy sauce seasoning.
Place beef short rib in a pan and season lightly with salt. Pan-sear until crispy, then set aside separately.
Wipe off excess grease from the pan with a kitchen towel, then add soybean sprouts and sliced dried shiitake mushrooms.
Top with cold rice (or instant rice), then add 1 tablespoon of mirin to reduce any raw odor and 2~3 tablespoons of water around the base to prevent burning.
Cover the pan and reduce heat to low. Steam gently for 3–4 minutes to soften the sprouts and warm the rice.
While the rice steams, mix together light soy sauce, sugar, red pepper powder, minced garlic, green onion, sesame oil, and toasted sesame seeds to make the dressing.
Once the sprouts are softened, place the seared beef short rib on top. Add a small piece of butter if desired, then toss everything together with the dressing to finish.
Season beef short rib with salt and pan-sear until crispy; set aside.
Add soybean sprouts, dried shiitake mushrooms, rice, mirin, and water to the pan. Cover and steam on low heat for 3–4 minutes.
Mix light soy sauce, sugar, red pepper powder, minced garlic, green onion, sesame oil, and toasted sesame seeds into a dressing. Toss with rice and beef short rib to serve.
