Solo Cooking God's Myeolchi Jang Kalguksu
A recipe that recreates the thick and spicy Gangwon-style jang kalguksu flavor by dissolving doenjang and gochujang in golden ratio into instant anchovy kalguksu ramen.

Ingredients needed 🛒1 servings
- 1 pack anchovy kalguksu ramen
- 1/2 tbsp doenjang
- 1/2 tbsp gochujang
- 1 tbsp minced garlic
- 1 tbsp gochugaru
- 1/2 potato
- 1/4 onion
- 1 egg
- some green onion
- adequate amount of crumbled seaweed
- some sesame seeds
- some black pepper
Recipe 🍳
- Pour 3½ paper cups of water into a pot.
- Add half of the ramen seasoning powder, the entire vegetable flake packet, 1/2 tbsp doenjang, and 1/2 tbsp gochujang.
- Add 1 tbsp minced garlic and 1 tbsp gochugaru, then bring to a boil while stirring to dissolve the pastes evenly.
- Once the water is boiling vigorously, add the kalguksu noodles, and add the potato and onion sliced as thinly as possible.
- Boil for about 5 minutes, stirring occasionally, until the noodles and potatoes are fully cooked.
- Adjust the seasoning by tasting the broth; add the remaining ramen powder or water as desired, then crack in 1 egg and gently mix.
- Garnish with the green part of green onion, crumbled seaweed, sesame seeds, and black pepper to finish.
- Boil water with half the ramen seasoning, doenjang, gochujang, garlic, and gochugaru.
- Add noodles and thinly sliced potato and onion to the boiling broth, and cook for 5 minutes.
- Stir in an egg, then top with green onion, crumbled seaweed, and black pepper to serve.
Cooking tips 💡
- Adding all the ramen powder at once can make it too salty due to the pastes, so start with only half and adjust later.
- Slice the potato as thinly as possible so it cooks within the 5 minutes it takes for the noodles.
- Potato is essential for creating the thick broth, so it is recommended not to omit it.
