- sugar 2 tablespoons

Recipe 🍳
- Place the cleaned pork spare ribs, with excess fat removed, into the pressure cooker.
- Close the lid and heat over high flame until you hear the hissing sound or the pressure indicator rises, then reduce to low heat and cook for about 25 minutes.
- Turn off the heat and wait until all pressure has completely released before safely opening the lid.
- In a bowl, mix gochujang-style soy sauce, instant coffee, sugar, and minced garlic to make the seasoning sauce.
- Pour the seasoning sauce into the pressure cooker and simmer uncovered until the broth thickens and the meat glistens with a glossy finish.
- Place spare ribs in the pressure cooker and cook on low heat for about 25 minutes.
- Once the pressure has fully released, open the lid and mix in the seasoning ingredients.
- Simmer uncovered until the broth becomes thick and the meat shines with a glossy finish.
Cooking tips 💡
- If steam starts escaping strongly from the pressure cooker, immediately reduce the heat to low to prevent the internal moisture from evaporating completely and burning the meat.
- For a deeper, richer color, you may add about 1 tablespoon of regular dark soy sauce.
