Raymon Kim's Spam Kimchi Cheese Tostada

1. Slice the spam into long stick shapes and finely chop the green onion.
2. Place the spam in a dry pan over medium-low heat and cook until the fat renders out and the spam becomes crispy.
3. Once the spam is crispy, add the kimchi to one side of the pan and sauté it in the rendered spam fat until well combined.
4. When the ingredients are well mixed, place a tortilla on top and gently press down to absorb the pan’s heat and oil.
5. Flip the tortilla, evenly spread the cooked spam and kimchi on top, then generously sprinkle mozzarella cheese.
6. Cover the pan with a lid and cook over low heat until the cheese melts completely and becomes soft.
7. Once the cheese has melted, sprinkle the finely chopped green onion evenly for added crunch and aroma.

Cooking tips 💡

• Spam naturally releases plenty of fat, so there's no need to add oil at the beginning.
• Since spam and kimchi both contain sugar, they can burn easily—keep the heat at medium-low throughout cooking.
• If you don’t have a pan lid, cover the pan with a large plate or aluminum foil to trap heat and help melt the cheese.
