Okjubu's Warm Carrot Salad

  • 1-2 carrots
  • Generous amount of olive oil
  • Salt, to taste
  • Pepper, to taste
  • Paprika powder, to taste
  • 1 cup Greek yogurt
  • 50g feta cheese
  • 1 tbsp lemon juice
  • Lemon zest, to taste
  • Seasoned salt (or salt), to taste
  • Dill, to taste
  • Balsamic glaze, as needed

Recipe 🍳

  1. Cut the carrots into long, thick stick shapes.
  2. Drizzle the cut carrots generously with olive oil, then add salt, pepper, and paprika powder. Mix well to coat evenly.
  3. Place in an air fryer and roast for about 15 minutes until golden brown.
  4. Make the sauce by mixing a full cup of Greek yogurt with feta cheese, lemon juice, lemon zest, seasoned salt, and chopped dill.
  5. Spread balsamic glaze on a plate, arrange the roasted carrots on top, then spoon the yogurt sauce over them.
  6. Finish by sprinkling fresh dill on top.

  • If you cut the carrots too thinly, they will become soft after roasting, so it is better to cut them thick.
