Okjubu's Steak Bibimbap

Ingredients needed 🛒1 servings
- beef for steak 1 piece
- rice 1 bowl
- cucumber 1/2
- purple onion 1
- green onion a little
- whole garlic 2 cloves
- wasabi a little
- salt to taste
- pepper to taste
- yellow sugar 1 tablespoon
- soy sauce 2 tablespoons
- mirin 2 tablespoons
- water 2 tablespoons
- yuzu paste 1 tablespoon
Recipe 🍳
- Slice half a cucumber and half a purple onion thinly, soak in 1 tablespoon of salt, squeeze out moisture, then mix with 1 tablespoon of yuzu paste to make a side garnish.
- Season the beef with salt, let it rest, then pat dry. Separate the fatty parts from the sides of the meat.
- Mix yellow sugar 1 tablespoon, soy sauce 2 tablespoons, mirin 2 tablespoons, water 2 tablespoons, a pinch of pepper, and the remaining half of the sliced purple onion to prepare the sauce.
- Place the separated fat pieces in a pan to render oil, then add the beef and sear both sides until golden brown, sprinkling pepper as you cook.
- Add the two sliced whole garlic cloves to enhance aroma while cooking, then remove the beef and let it rest.
- Pour the pre-made sauce into the same pan with the remaining oil, reduce until slightly thickened, then strain to keep only the sauce.
- Slice the grilled steak into thin, bite-sized pieces.
- Place rice in a bowl, drizzle with the reduced sauce, then top with sliced steak, finely chopped green onion, and the remaining sauce, wasabi, and cucumber pickle on the side.
- Soak cucumber and onion in salt, squeeze out moisture, then mix with yuzu paste.
- Season beef, pat dry, and separate the fatty portions.
- Mix sugar, soy sauce, mirin, water, pepper, and onion to prepare the sauce.
- Use the separated fat to heat the pan, then cook beef and garlic together before removing.
- Add the sauce to the pan with remaining oil, reduce, then strain.
- Top rice with sauce, sliced steak, green onion, and serve with wasabi and cucumber pickle.
