Okjubu's Quick Ratatouille

  • tomato sauce 1 cup
  • zucchini 1/3 medium
  • eggplant 1/3 medium
  • cremini mushrooms 1/2 large
  • eggs 2~3
  • black pepper to taste
  • seasoning salt to taste
  • mozzarella cheese 1 handful

Recipe 🍳

  1. Spread a thick layer of tomato sauce in a microwave-safe dish.
  2. Slice zucchini, eggplant, and cremini mushrooms into slightly thick pieces.
  3. Crack eggs on top of the sauce, piercing the yolks several times with a fork or toothpick to prevent bursting during microwaving.
  4. Arrange the prepared vegetables upright like books stacked in a bookshelf.
  5. Sprinkle black pepper and seasoning salt evenly over the top.
  6. Generously sprinkle mozzarella cheese on top and microwave until the cheese melts and the eggs are cooked through.
