  • Those looking for a unique, spicy-sour anchovy dish instead of everyday soy sauce stir-fried anchovies
  • Those wanting a top-tier rice-boosting side dish that pairs perfectly with plain rice, even when eaten alone

Ingredients needed 🛒3 servings

  • Hand-cleaned dried anchovies 1 handful
  • Onion 1/2
  • Green onion a little
  • Anchovy sauce 1/2 tablespoon
  • Sugar 2 tablespoons
  • Vinegar 1 tablespoon
  • Soy sauce 1 tablespoon
  • Red pepper powder 1 tablespoon
  • Hulled sesame seeds to taste

Recipe 🍳

  1. Remove the heads and internal organs (guts) from the anchovies and clean them thoroughly.
  2. Place the cleaned anchovies in a dry pan without oil and stir-fry over medium heat until they turn slightly brown and become crispy, then reduce the heat.
  3. Add the anchovy sauce, sugar, vinegar, and soy sauce in the specified amounts and gently mix.
  4. Add the finely chopped green onions and sliced onions, then sprinkle in the red pepper powder and hulled sesame seeds. Mix well using your hands or a utensil until evenly combined.
  1. Remove heads and guts from anchovies and clean them.
  2. Stir-fry anchovies in a dry pan until crispy to eliminate fishy smell.
  3. Mix in anchovy sauce, sugar, vinegar, soy sauce, vegetables, and red pepper powder.

Cooking tips 💡

  • The vinegar in the seasoning is essential—it brings out the dish’s characteristic refreshing, clean flavor and effectively neutralizes any fishy taste.
  • Unlike regular stir-fried anchovies, using only a small amount of anchovy sauce enhances the natural depth and umami of the anchovies.
