Ingredients needed 🛒1 servings
- egg 2 pieces
- green onion适量
- dried anchovy broth (or dried abalone broth) 2 cups (400cc)
- sesame oil 1 tablespoon
Recipe 🍳
- Crack 2 eggs into a bowl, remove the stringy parts, and gently whisk.
- Add finely chopped green onion to the egg mixture and mix evenly.
- Add 1 tablespoon of sesame oil to the egg mixture and lightly stir.
- Pour 2 cups of broth into a pot and bring to a boil over high heat.
- Once the broth is boiling, slowly pour the prepared egg mixture around the edge of the pot.
- Do not stir immediately—let it sit undisturbed until the egg flowers bloom.
- When the eggs rise to the surface, give them a gentle stir once and turn off the heat to finish.
- Whisk the eggs and remove the strings.
- Mix chopped green onion and sesame oil into the egg mixture.
- Pour the egg mixture into the boiling broth.
- Stir gently once the eggs float to the top and finish.
Cooking tips 💡
- Do not add salt directly to the egg, as it can cause the egg to break down and leak into the broth when making soup.
- Avoid stirring immediately after adding the egg mixture, as this will make the broth cloudy—wait until the egg flowers fully form and rise.
