Ingredients needed 🛒1 servings
- rice 1 bowl
- processed butter 1 piece
- kimchi 50g
- mozzarella cheese as needed
- green chili pepper 1
- scallion 2 stalks
- universal soy sauce 1 tablespoon (or salt/ground chili paste)
- egg yolk 1
- minced pickled radish a little (optional)
- anchovy roe a little (optional)
- red chili pepper a little (optional)
Recipe 🍳
- Evenly spread 1 piece of processed butter on the bottom and sides of the prepared stew pot.
- Place 1 bowl of cold rice or slightly cooled rice in the center of the stew pot.
- Arrange 50g of finely chopped kimchi and mozzarella cheese around the empty spaces near the rice and along the edges of the pot.
- Add 1 finely chopped green chili pepper and 2 scallions; optionally add minced pickled radish or anchovy roe based on texture preference and taste.
- Generously sprinkle 1 tablespoon of Limjjang’s universal soy sauce over the rice and ingredients in a circular motion.
- Gently place 1 egg yolk in the center of the rice and top with a small amount of red chili pepper for garnish.
- Place the stew pot on heat. Once you hear a crackling sound from the bottom, immediately reduce to low heat, cover with the lid, and steam for 3 minutes.
- Turn off the heat when the cheese has fully melted and a savory crust forms at the bottom. Break the yolk and mix thoroughly before eating.
- Butter the stew pot and place 1 bowl of rice in the center.
- Arrange kimchi, mozzarella cheese, green chili pepper, and scallions around the rice.
- Sprinkle universal soy sauce and place 1 egg yolk in the center.
- When you hear a crackling sound, reduce heat to low, cover with the lid, and cook for 3 minutes to melt the cheese.
Cooking tips 💡
- If you don’t have Limjjang’s universal soy sauce, use regular salt or gochujang at home to adjust seasoning to your taste.
- As soon as you hear the crackling sound from the bottom, reduce the heat and always cover the pot—this ensures the cheese melts evenly throughout the inside using the stew pot’s heat.
- The tangy flavor of well-aged kimchi perfectly balances the richness of the cheese, so be sure to include it for maximum flavor.
