Lee Hye-jung's Yam Wun Sen

A Thai-style salad combining shrimp gently poached at low temperature, thin rice noodles, and a sweet-and-sour fish sauce dressing

Ingredients needed 2 servings

Recipe

Cooking tips

  • Poach the shrimp at a low temperature of 70°C, just when steam begins to rise, rather than in boiling water, to keep them plump and tender.
  • If fish sauce is unavailable, substitute with fermented sand lance sauce or fermented anchovy sauce.
  • If the flavor of cilantro is too strong, omit it and use parsley or other leafy greens instead.

Recommended for

  • Those wanting a unique, light, sweet-and-sour salad-style meal.
  • Those who want to learn the technique of poaching shrimp to keep them plump without shrinking.
  • Those who want to easily make restaurant-style yam wun sen at home.
