Rinse the burdock under running water, gently scrubbing only the outer skin with a sponge to preserve the abundant saponin content in the peel.
Cut the whole burdock lengthwise in half, then slice diagonally into pieces about 2–3mm thick to allow even seasoning absorption during cooking.
Dissolve sea salt 1 tablespoon in cold water, soak the sliced burdock for 5 minutes to prevent browning, then drain well using a colander.
Heat 2 tablespoons of cooking oil in a pan, add the burdock, and sauté over high heat for 5 minutes without any seasoning to completely remove its characteristic sharpness.
Once the burdock is well sautéed, add 1/2 cup (100ml) water, 4 tablespoons premium soy sauce, 2 slices of sliced ginger, and 3 tablespoons jujube syrup. Reduce heat to medium-low, cover, and simmer for 5 minutes.
After 5 minutes, uncover and increase heat slightly to medium. Continue stirring for about 3 minutes and 30 seconds until the liquid reduces and coats the burdock with a rich color.
When most of the liquid has evaporated, lower the heat again, add 1 tablespoon jujube syrup and 1 tablespoon sesame oil to enhance shine, then remove the used ginger pieces.
Turn off the heat, sprinkle 1 tablespoon hulled sesame seeds evenly over the dish, mix lightly, and finish the recipe.

Clean the burdock, cut it in half lengthwise, slice diagonally, and soak in salted water for 5 minutes to prevent discoloration.
Sauté the burdock in a pan with just cooking oil until fully cooked, then add water, soy sauce, ginger, and jujube syrup, cover, and simmer.
Uncover and reduce the sauce until dry, then add the final jujube syrup, sesame oil, and sesame seeds to coat and add gloss.
