- Tofu, 1 block
- Crab meat (or imitation crab), 100g
- Enoki mushrooms, 1/2 pack
- Green onion, 1 stalk
- Minced ginger, 1 tsp
- Vinegar, 1 tbsp
- Cooking wine, 1 tbsp
- Salt, a pinch
- Sugar, a pinch
- Chicken powder, 1 tsp
- MSG, a pinch
- Starch slurry, a little
- Sesame oil, 1 tbsp
- Water, as needed
Recipe 🍳
- Thinly slice the green onion and finely mince the ginger.
- Cut the enoki mushrooms in half so they are not too long, and cut the tofu into thick, large pieces so it doesn't crumble.
- Heat a generous amount of oil in a pan over heat, add the tofu and fry until the outside is golden and crispy, being careful not to break it, then remove and set aside.
- Add oil to the pan, stir-fry the sliced green onion and minced ginger, then add vinegar and cooking wine to bring out the characteristic Chinese flavor.
- Add the shredded crab meat and stir-fry lightly, then pour in enough water to just cover, and season with salt, MSG, sugar, and chicken powder.
- When the broth comes to a boil, skim off any foam from the surface for a clean taste.
- Add the fried tofu and enoki mushrooms, and let them simmer briefly to absorb the sauce.
- Gradually add the starch slurry to thicken the sauce to the desired consistency, then finish with a drizzle of sesame oil for a nutty aroma.
- Cut the tofu into large pieces and fry until golden; prepare the aromatic vegetables and crab meat.
- Stir-fry the green onion and ginger, then add crab meat, water, and seasonings to make a clean broth base.
- Add the fried tofu and enoki mushrooms, simmer, then thicken with starch slurry and finish with sesame oil.
