• Mascarpone cream: 15g water, 3g powdered gelatin, 250g heavy cream, 50g sugar, 2g vanilla extract, 200g mascarpone cheese, 35g water (about 80°C), 8g matcha powder, 10g condensed milk
• Matcha ganache sauce: 5g water, 1g powdered gelatin, 60g white couverture chocolate, 55g heavy cream, 3g matcha powder, 10g condensed milk, 10g starch syrup, 20g milk (warm), 7g unsalted butter, 0.5g salt
• Glutinous rice cake: 50g glutinous rice flour (dry), 35g sugar, 10g condensed milk, 85g milk (warm), 20g heavy cream (warm), 7g unsalted butter, a pinch of salt
