Cooking Tree's Yuja Matcha Crepe Cake

Ingredients needed 🛒6 servings

• Crepe: 200g (4) eggs, 60g sugar, 1g salt, 260g all-purpose flour, 10g matcha powder, 600g warm milk (about 40℃), 50g melted unsalted butter
• Yuja curd: 8g water, 1.5g powdered gelatin, 50g egg (whole), 1 egg yolk, 10g sugar, a pinch of salt, 70g yuja syrup, -when pulp is abundant: mix 90g yuja-cheong + 30g water and strain through a sieve., (when using this method, omit 20g water from the ingredients), 20g water, 5g lemon juice, 45g unsalted butter
• Matcha mascarpone cream: 450g heavy cream, 90g mascarpone cheese, 35g sugar, 20g yuja syrup (strain yuja-cheong through a sieve), 2g vanilla bean paste, 5g matcha powder, 15g melted white chocolate, 15g sugar
