Recipe

Peel the sweet potatoes, cut them into chunks (using a turning cut), and soak in water to remove excess starch.
Finely chop the mint chocolate and set aside.
Pour cooking oil into a pan and fry the sweet potatoes. When small bubbles form around the sweet potatoes, the oil temperature is right.
When the sweet potatoes are cooked and float to the surface, drain them in a strainer to remove excess oil.
In another pan, add cooking oil and sugar, and melt to make a syrup. Once the sugar starts to melt, stir gently.
Add the fried sweet potatoes to the syrup, coat evenly, then add water to adjust the consistency.
Grease a plate with cooking oil, spread the sweet potatoes on it, and separate them so they don't stick together.
Once the sweet potatoes have cooled completely, mix in the chopped mint chocolate to finish.

Peel and fry the sweet potatoes.
Make a sugar syrup and coat the sweet potatoes.
After cooling completely, mix in the mint chocolate.
