A moist, authentic Baek Jong-won style beef bulgogi made by first tossing the meat in sweet seasonings to tenderize it, and then stir-frying it with a soy sauce seasoning and plenty of vegetables until juicy.

  • Sweet molecules like sugar and starch syrup are smaller than soy sauce molecules, so they must penetrate the meat first to tenderize it and allow the seasoning to soak in deeply.
  • Slice onions generously and add them; during stir-frying they release natural sweetness along with a rich, moist broth.
  • When using meat that has been stored for a long time or frozen, turn off the heat and add a couple of extra drops of sesame oil to cleanly eliminate any off-odor.
  • Besides shiitake mushrooms, king oyster mushrooms, button mushrooms, or thickly sliced cabbage also work wonderfully.
