Recipe

Peel the potatoes by scraping the skin with a spoon or knife.
Place the potatoes in a pot and add water until they are about 80% submerged, just barely visible.
Add half a tablespoon of salt and turn on the heat to boil.
While the potatoes are boiling, dissolve 0.2~0.3 tablespoons of new sugar in 1 cup of water in advance.
Check if the potatoes are cooked by piercing them; if a spoon goes in easily, drain the water.
Pour the prepared new sugar water over the hot potatoes, increase the heat, and boil down rapidly.
When the water is almost gone, roll the potatoes around to coat them.
Once the potatoes become fluffy with a powdery surface and the skin seems to peel off, they are done.

Peel the potatoes, place them in a pot with water to about 80% level, add salt, and boil.
Dissolve new sugar in water in advance.
When the potatoes are cooked, drain the water, pour the new sugar water over them, and boil down rapidly while coating.
