Ingredients needed 🛒2 servings
- pork belly 600g
- onion 1
- green onion 3
- gochujang 3 tablespoons
- soy sauce 2 tablespoons
- sugar 1 tablespoon
- corn syrup 1 tablespoon
- ginger syrup (or minced ginger) 1 tablespoon
- sesame oil 2 tablespoons
- black pepper a pinch
- toasted sesame seeds 2 tablespoons
Recipe 🍳
- Grate 1 onion finely using a grater or blender to extract the juice.
- To achieve a tender texture, lightly pound the thick pork belly with a meat mallet or the back of a knife.
- In the grated onion juice, mix thoroughly: 3 tablespoons gochujang, 2 tablespoons soy sauce, 1 tablespoon sugar, 1 tablespoon corn syrup, 1 tablespoon ginger syrup (or minced ginger), chopped green onion, 2 tablespoons sesame oil, and a generous amount of black pepper to make the marinade.
- Place the pork belly slices one by one into the prepared marinade, stacking them neatly to ensure even marination.
- Heat a pan over low heat and lightly coat with sesame oil, then place the marinated pork belly on it.
- Adjust the heat carefully to avoid burning, frequently turning the meat to ensure even grilling.
- Once the pork is fully cooked through, slice it into serving-sized pieces and sprinkle with toasted sesame seeds before serving.
- Grate the onion and pound the pork belly with the back of a knife to tenderize.
- Mix the grated onion with gochujang, soy sauce, sugar, and other seasonings to create a savory marinade.
- Coat the pork belly evenly with the marinade and let it marinate, stacked neatly.
- Sear the pork in a pan heated over low heat, brushing with sesame oil and turning frequently to achieve a golden-brown finish without burning.
Cooking tips 💡
- Gochujang marinade burns easily on high heat, so always grill over low heat for even cooking throughout.
- Adding a small amount of ginger syrup or fresh minced ginger helps eliminate any porky odor and enhances the overall flavor.
