Ingredients needed 🛒1 servings

  • pork belly 300g
  • salt a pinch
  • pepper a little
  • chili powder 1 tablespoon
  • potato starch 2 tablespoons
  • green onion (white part) 1/2 stalk
  • green chili pepper 2 pieces
  • minced garlic 1/2 tablespoon
  • light soy sauce 2 tablespoons
  • sugar 1 tablespoon
  • rice 1 bowl
  • toasted sesame seeds a little

Recipe 🍳

  1. Cut pork belly into bite-sized pieces and place them all in a plastic bag.
  2. Add a pinch of salt and a little pepper inside the bag, then sprinkle in 1 tablespoon of chili powder and 2 tablespoons of potato starch.
  3. Seal the bag and shake well to evenly coat the pork belly with the seasoning mixture.
  4. Heat generous amount of cooking oil in a pan, then lay the seasoned pork belly pieces in without overlapping, and start grilling over medium heat.
  5. As the meat gradually cooks, it releases fat, which blends with the starch and chili powder, frying slightly and forming natural chili oil.
  6. Once sufficient chili oil has formed, add finely chopped green onion white parts and green chili peppers, and stir-fry together to enhance aroma.
  7. Pour 1/2 tablespoon of minced garlic and 2 tablespoons of light soy sauce into the empty space of the pan, letting it sizzle slightly to build depth of flavor, then evenly sprinkle 1 tablespoon of sugar over the meat and grill thoroughly to let the sauce adhere.
  8. When the pork is fully cooked, push it to one side, place 1 bowl of rice in the empty space, and generously sprinkle with pepper and toasted sesame seeds to finish.
  1. Slice pork belly and mix with salt, pepper, chili powder, and potato starch in a plastic bag, shaking well to coat.
  2. Grill over medium heat in a pan with plenty of oil, allowing natural chili oil to form as the meat cooks.
  3. Add minced green onion, chili pepper, garlic, soy sauce, and sugar in order, stir-fry until dry, then serve over rice.

Cooking tips 💡

  • Using potato starch makes the meat surface much crispier and helps the sauce cling tightly, giving a satisfying crispy-on-the-outside, juicy-on-the-inside texture.
  • Pouring soy sauce into the empty space of the pan and letting it bubble briefly before mixing with the meat enhances smoky flavor and overall richness.
