Ttukdak Hyung's Kimchi Jjigae

A spicy kimchi jjigae made with kimchi, pork shoulder, and tofu, simmered in a spicy chili paste sauce for a hearty, flavorful broth.

Ingredients needed 🛒2 servings

  • Pork shoulder: 500g
  • Soy sauce: 3 tablespoons
  • Cooking wine: 3 tablespoons
  • Minced garlic: 2 tablespoons
  • Whole black pepper: a little
  • Minced ginger: 1/3 tablespoon
  • Cooking oil: 2 tablespoons
  • Onion: 1/2
  • Kimchi: 1/4 head
  • Red pepper flakes: 3 tablespoons
  • Doenjang: 1 tablespoon
  • Gochujang: 1 tablespoon
  • Tofu: 1 block
  • Cheongyang chili pepper: 2
  • Green onion: 1 stalk
  • Beef Dashida: 1/2 tablespoon
  • Store-bought beef bone broth: 2 cups (based on paper cup)

Recipe 🍳

  1. Add 2 tablespoons of cooking oil to a preheated frying pan, then add half an onion, thinly sliced, and the marinated pork, and stir-fry well.
  2. When it's somewhat stir-fried, add 1/4 head of kimchi, cut into bite-sized pieces.
  3. Add 3 tablespoons of red pepper flakes, 1 tablespoon of doenjang, and 1 tablespoon of gochujang, then stir-fry while mixing the seasonings well. Stir-frying the oil with the meat, onion, and various seasonings, even if it seems like a minor difference from adding all ingredients at once and boiling, has the effect of maximizing the flavor and umami of the dish.
  4. Add 2 cups (about 350ml) of store-bought beef bone broth using a paper cup and wait for it to boil. You can use any brand of broth labeled as beef bone broth or beef bone soup. If you add the entire pack of store-bought beef bone broth, it will become kimchi jjigae rather than kimchi jjigae, so be mindful of the amount.
  5. When the broth starts to boil, add 1 block of tofu cut into bite-sized pieces.
  6. Optionally, add 1/2 tablespoon of beef Dashida and mix well. MSG and Dashida used in recipes are always optional, not mandatory. It is recommended to add them if you want to replicate the taste of restaurant food at home, or if you taste it and find it lacking or bland.
  7. Finally, add 2 Cheongyang chili peppers and 1 stalk of thinly sliced green onion, mix well, and finish.
