- Chicken hearts, as needed
- Soju, a little (for blanching)
- Teriyaki sauce, 2 tbsp
- Oyster sauce, 2 tbsp
- Cheongju (rice wine), 2 tbsp
- Mayonnaise, a little
- Wooden skewers
Recipe 🍳
- Rinse the chicken hearts under running water to remove blood and impurities.
- Bring water to a boil, add a splash of soju, then blanch the hearts until the outside is cooked. Drain.
- Slice each blanched heart in half lengthwise and open it flat. Thread them onto skewers in order.
- In a bowl, mix teriyaki sauce, oyster sauce, and cheongju in a 1:1:1 ratio to make the skewer sauce.
- Lightly oil a pan or leave it dry, place the skewers, and generously brush the sauce on both sides while grilling until golden brown.
- If you're worried about splattering the stove, you can also cook the sauce-coated skewers in an air fryer at 180°C (350°F) for 15 minutes.
- Arrange the finished heart skewers on a plate and drizzle mayonnaise in a zigzag pattern on top.
- Rinse the hearts and blanch them in boiling water with soju.
- Cut the blanched hearts in half, open them flat, and thread onto skewers. Mix teriyaki sauce, oyster sauce, and cheongju in a 1:1:1 ratio to make the sauce.
- Grill the skewers in a pan or air fryer (180°C/350°F for 15 minutes) while brushing with sauce on both sides. Finish with a drizzle of mayonnaise.

- Thoroughly wash the blood inside the hearts and blanch them with soju to completely eliminate the gamey odor.
- For a charred, direct-heat flavor, pan-grill the skewers well; for a cleaner, easier method, use an air fryer.
- If you prefer a spicy kick, top with gochugaru (Korean chili flakes) or chopped cheongyang chili peppers, or swap mayonnaise for a spicy sauce.
